Vegan Cake Recipe

  • 250 plain flour
  • 250 grams caster sugar
  • 1/2 teaspoons bicarbonate of soda
  • teaspoon salt
  • 250 ml soya milk
  • 60 grams vegetable oil
  • tablespoons white wine vinegar
  • teaspoons vanilla extract

Method: 

Instructions
1. Preheat oven to 180c
2. Line a 20cm cake tin.
3. Combine all the dry ingredients in a bowl. Mix together with a whisk.
4. Mix together all the wet ingredients in a jug.
5. Pour the wet ingredients into the dry ingredients. Mix together lightly, then pour your cake batter into your tin.
6. Bake for 25-30 minutes until the cake is golden and a skewer inserted into the middle of the cake comes out clean.
7. Allow to cool in the tin for a while, before moving to a cooling rack.
Icing Recipe: 
  • 55g Soya Margarine
  • 3 tbsp Soya Milk
  • 230g Icing Sugar

Method:

1.Combine all ingredients together.

My 30 day Vegan Pledge

So, the 3rd November it was a month since I signed up to the Vegan Pledge. I successfully finished the challenge, trying new recipes of Vegan Cake, Vegan Chocolate and other dishes I created myself. So what now I here you ask?

Well, I honestly don’t know. I have kept up with it so far, I have been out to restaurants since which were happy to cater for me and I feel I have more awareness about Veganism. I may keep being a Vegan, or I may turn Vegetarian. I honestly don’t know – but we shall see.

It has been a positive experience, I haven’t experienced any fatigue or tiredness and have lived my life the same as before I was vegan. The only thing I have found is, it is slightly more expensive to buy food – especially from the Free From section in the supermarkets.

I know this blog post may not interest everyone, and I’m not forcing my view onto anyone else. I just want to share my experience

My Vegan Pledge so far

At the time of writing this I am on my 11th day of trying to be vegan. So far it is going really well and I am loving the challenge of trying new foods and discovering restaurants which are Vegan friendly! I have made a specific Instagram account called: c2cvegan to post any food I make, or anything which I have discovered and love.

I don’t know how long I will stay Vegan for – if I will just for the 30 days? Or if ill try to keep it up? I just don’t know – I want to just get through the next 19 days.

If you are planning to go Vegan, I would definitely recommend doing the Vegan Pledge as they give you lots of daily hips and tips to help you integrate into a new lifestyle and also recommends restaurants which are vegan friendly. This week I visited Zizzi, and they were fantastic! They had their own Vegan Menu, I decided to have:

  • Vegan Bruschetta
  • Vegan Classic Margherita with extra spinach, butternut squash and caramelised onions.

It was delicious! I would definitely recommend if you are vegan, dairy free or gluten free! They are so accommodating and don’t make a fuss.

Another place I have eaten at is Pizza Hut. I had a pan base (As Im led to believe its vegan) with their tomato sauce, no cheese but with red onion, pineapple and sweetcorn. I also had wedges – and my boyfriend had garlic bread. Though on later research – I do not know if the garlic bread is actually vegan ? Does anyone know?

Other than that, I’m loving Nakd bars and creating meals. If wanted I will do another post on the frozen vegan food I eat, and helps a lot to get in my protein! I can also do a post on how I make sure I get my nutrients and vitamins.

The 30 day Vegan Pledge

Growing up my family were never massive meat eaters – we always had Quorn products in the house and mainly ate vegetarian. Over the past year, I have tried to cut down on my meat consumption and in the past 3 weeks I have been eating mainly vegan foods with the odd meat product if I went out.

screen-shot-2016-10-02-at-14-14-35Then, a couple of weeks ago I discovered the Vegan Society 30 day pledge, and decided to take up the challenge. I am fine eating vegan in my own home, however I struggle when faced with going to restaurants and when eating out – then Im stuck with what to order. However, I want to make a good go of these next 30 days and see how I get on.
I am not here to preach onto other people and make them change their lifestyle, however it is a lifestyle change that I would like to try and see if I can face the challenge. I am aware of the negative effects and of the possible vitamin deficiencies which I am going to take into account and I will buy food to replicate this.

I will try  update you throughout the 30 days, with ‘what I eat in a day’ and also with any recipes I try out, or any products I buy which are worth trying out. I would love any advice, hints or tips that you have!
