Vegan Cake Recipe

  • 250 plain flour
  • 250 grams caster sugar
  • 1/2 teaspoons bicarbonate of soda
  • teaspoon salt
  • 250 ml soya milk
  • 60 grams vegetable oil
  • tablespoons white wine vinegar
  • teaspoons vanilla extract

Method: 

Instructions
1. Preheat oven to 180c
2. Line a 20cm cake tin.
3. Combine all the dry ingredients in a bowl. Mix together with a whisk.
4. Mix together all the wet ingredients in a jug.
5. Pour the wet ingredients into the dry ingredients. Mix together lightly, then pour your cake batter into your tin.
6. Bake for 25-30 minutes until the cake is golden and a skewer inserted into the middle of the cake comes out clean.
7. Allow to cool in the tin for a while, before moving to a cooling rack.
Icing Recipe: 
  • 55g Soya Margarine
  • 3 tbsp Soya Milk
  • 230g Icing Sugar

Method:

1.Combine all ingredients together.

Easy Dairy Free Tablet

After trying Scottish Tablet for myself, I soon found a firm new favourite food. As my partner is Dairy Intolerant, I decided to find a dairy free tablet recipe online and it turned out fantastic first time, so I wanted to share it with you.

I came across this recipe on ‘My Pampered Life’ blog page and the recipe seemed easy to make and used ingredients easy to find in any local shop.image1-6

You will need:

  • 900g Golden Granulated Sugar
  • 370ml Soya Milk
  • 1 tbsp Golden Syrup
  • 1 tsp Vanilla Extract
  • 1 tsp Dairy Free Spread – I used Pure Sunflower

Method: 

  1. Put the Sugar, Soya Milk, Golden Syrup and Vanilla Extract into a large pan.
  2. Slowly melt everything together until boiling.
  3. Reduce the heat and simmer for 25 minutes, constantly stirring.
  4. After 25 minutes, take a teaspoon of the mixture out of the pan and put it on a cold plate.
  5. Wait 30 seconds and then see if the mixture is thick and sticky. It should form ridges when pushed with a finger. (If it isn’t thick/sticky or doesn’t form ridges then boil it for another 2-5 minutes).
  6. Take it off the heat and add the Dairy Free Spread.
  7. Mix Constantly for 8-10 minutes with a wooden spoon, until it starts to stiffen up and forms a cloudy slightly grainy texture.
  8. Pour into a tray to set for 30 minutes before cutting.

This Dairy Free Tablet recipe is delicious and the soya milk gives it a hint of sweetness! Its easy – it can just get a bit sticky!

White Chocolate and Raspberry Dessert Pizza

After much thought and consideration, a friend and I decided we wanted to make a Dessert Pizza. After searching through Pinterest, we found THE ONE! We chose a White Chocolate and Raspberry Dessert Pizza as we thought a Milk chocolate pizza may be too sickly. We followed Sugar Spun Run’s basic recipe but made a few of our own adjustments:

Pizza Base: image3
1 sheet of Ready to Roll Puff Pastry 
120g White Chocolate

Cream Cheese Sauce: 
280g Soft Cheese
65/70g Caster Sugar
1 tsp Vanilla Extract

Raspberry Jam:
200g Raspberries mashed
2 Tbsp Caster Sugar
1 1/2 Tbsp Water

Streusel:
70g Caster Sugar
40g Plain Flour
2 Tbsp Butter

Instructions:

1. Preheat oven to 260 degrees C.
2. Unroll the Ready to Roll Puff Pastry sheet onto a baking tray.
3. Add all the ingredients of the Raspberry Jam into a saucepan and heat over a high heat.
4. Stir for 5 minutes or until thickened and put to one side.
5. Break up the 400g of White Chocolate into chunks and scatter on the pizza base.
6. In a microwavable bowl, heat up the Cream Cheese until softened.
7. Stir in the Vanilla Extract and Caster Sugar.
8. Pour the Cream Cheese mixture over the pizza base.
9. Spread the Raspberry Jam evenly over the pizza base and swirl it throughout.
10. In a bowl, combine the ingredients from the Streusel and rub together.
11. Sprinkle over the pizza.
12. Put in the oven for around 15/20 minutes – Keep an eye on it though!
